Elisabeth Dunham is an award-winning former staff reporter for several national and major metropolitan newspapers who made the switch to holistic health counseling after recovering from a longterm serious illness. Unable to tolerate drugs and supplements, she decided to overhaul her diet and lifestyle and was surprised at the positive impacts on her health. While others diagnosed with the same disease never seemed to get better despite rounds and rounds of drugs, she began to regain her health and was eventually able to return to work and school. She is a graduate of the Institute for Integrative Nutrition’s dual program with the State University of New York, where she received training in more than 100 dietary theories and studied a variety of practical nutritional and lifestyle coaching methods. She is also a widely published freelance writer for magazines and newspapers, covering the topics of health and green design. As a health counselor and writer her goal is to help people reach their full health and wellness potential by creating a personalized “roadmap to health” that suits each body and lifestyle. She is also the founder/owner of Lava Love, a line of all natural healing bath products made with volcanic ash from Oregon volcanoes, featured in Yoga Journal, Outside Magazine and many other publications.
What is a plant-based diet? It's a way of eating that focuses on whole, unrefined, or minimally refined plants. It’s a diet based on fresh fruits and vegetables, tubers, whole grains, and legumes; and it excludes or minimizes animal products as well as highly refined, processed food in order to allow the body to heal and achieve a naturally balanced weight. Research shows that it reverses and prevents heart disease, diabetes, obesity, cancer and many other illnesses.
